Weighing In

My current weight is 297, last week was 295. I gained two pounds. I'm disappointed won't lie. I really thought I lost some weight. Where am I missing it? I did drink pop everyday so no pop this week except on my free day. I will miss it but I know I need to lighten up on it. I will also walk in place for 10 minutes a day. So stay tuned until next week. I will be back with some good news to report.

I'm starting to realize how much losing weight is all about your mindset. Where your thoughts go your body will follow. So I have to be careful how I think. I can and will be successful at getting the weight off. I'm not interested on going on a diet because they don't work. I'm making a lifestyle change for lasting results. I'm working through my inner issues and getting healthy mentally. I know it's never been about the food but more about not dealing with my stuff. That's why this segment is called what's weighing you down. Once you figure out what's weighing you down you will lose the weight. So my question for you today is what's weighing you down? Healthy Recipes

Halushki

INGREDIENTS:
1 1/2 pounds pork chops
garlic powder to taste
salt and pepper to taste
1 onion, chopped
1 large head cabbage, cut into squares
1 pound large egg noodles
1 tablespoon butter
DIRECTIONS:
1. Sprinkle pork chops with garlic powder, salt and pepper and place in a large greased sauce pan or deep skillet with chopped onion and fry until very brown and well cooked. It is ok if they stick a little, as the drippings are essential in this dish. When done, remove chops and set aside.
2. Add a little water to the saucepan or skillet and mix up the drippings a bit. Place cabbage into the pot, and allow to cook down completely.
3. In a separate large saucepan, boil the egg noodles in water until cooked. Drain noodles and mix in butter.
4. Cut up the pork chops to bite size pieces and set aside. When the cabbage has cooked down, add pork and cooked noodles and mix completely.

Prep Time: 45 Minutes
Ready In: 50 Minutes

Weighing In

I weighed in at 295 this morning. Last weigh in I was at 294 which is a one pound difference so I really haven't gained or lost any weight. I've decided next week I going to try something new. I'm going to incorporate snacks into my meal plan to boost my metabolism. I will have a mid-morning, afternoon, and evening snack. The snacks will be healthy snacks such as fruit, popcorn with no butter, string cheese & crackers, etc... I will let you know how it works out. So stay tuned!

What's Weighing You Down?

Why is it so hard to admit when we fail? For example this week I wasn't going to post my weight because I gained two pounds. I was embarrassed because I'm writing a blog about losing weight but instead of losing, lately I have been gaining. But like my mother told me it's important to share my wins as well as my losses with my readers who need to know they are not alone in this struggle. So along this journey I may fall off but I will win if I just keep getting back up and don't stay down.
I say the same to you never give up if you fall just brush yourself off and get back up. Be blessed.

Healthy Recipes

From Mayo Clinic

Chili:
1/2 cup chopped onion
2 large tomatoes (or 2 cups canned, unsalted tomatoes)
4 cups canned kidney beans, rinsed and drained
1 cup chopped celery
1 teaspoon sugar
1 1/2 tablespoons chili powder or to taste
Water, as desired
2 tablespoons cornmeal
Jalapeno peppers, seeded and chopped, as desired
Directions
In a soup pot, add the ground beef and onion. Over medium heat saute until the meat is browned and the onion is translucent. Drain well.

Add the tomatoes, kidney beans, celery, sugar and chili powder to the ground beef mixture. Cover and cook for 10 minutes, stirring frequently. Uncover and add water to desired consistency. Stir in cornmeal. Cook for at least 10 minutes more to allow the flavors to blend.

Ladle into warmed bowls and garnish with jalapeno peppers, if desired. Serve immediately.

Healthy Tips

Let's discuss food triggers. We all have triggers that push us to over-indulge. One of my trigger foods are potato chips. Once I eat one chip it's hard to stop at just a few... I want like a whole bowl.(smile) So it's best to stay away from them. What are your trigger foods? It may be best to stay away from them. Now don't get me wrong I'm not saying to never have them but maybe restrict to having it once a week on your free day.

Weighing In

As you may have noticed I haven't posted my weight in a few weeks. I haven't been eating like I should have so I was reluctant to weigh myself. I know you can relate.(smile) But I can't run from the truth I need to embrace it. My current weight is 294, at my last weigh in I was at 292 so I've gained 2 pounds.

Lord I ask for help this week. I need balance in my life & no excess in any area. Help me make healthy choices. Give me a appetite for good wholesome foods like fruit and vegetables.

What's Weighing You Down?

Ok I need to get it together been eating way too much junk lately. I'm considering going to nutritionist. I'm not interested in going on a diet but just eating healthier and making better choices. A friend at work is going to a nutritionist and she loves it. She told me she actually eats more. They emphasize eating fresh foods and staying away from processed foods. Not only has she lost weight she says she feels better.

Healthy Recipes

From Food Network:
Foil-Packet Fish With Corn Relish
1 teaspoon coriander seeds
1 cup fresh parsley
1 cup fresh cilantro, plus more for garnish
1 1-inch piece ginger, peeled and roughly chopped
2 tablespoons vegetable oil
Kosher salt
1 3/4 cups corn kernels (fresh or frozen; thawed if frozen)
2 medium tomatoes, cut into chunks
4 6-ounce skinless striped-bass fillets (about 1 inch thick)
2 limes, cut into wedges


Preheat a grill to high. Toast the coriander seeds in a dry skillet over medium-high heat, tossing, about 3 minutes. Crush the seeds on a cutting board (the bottom of a measuring cup works well), then pulse with the parsley, cilantro, ginger, vegetable oil, 1/2 teaspoon salt and 1 tablespoon water in a food processor to make a coarse mixture.

Toss the corn and tomatoes with 2 teaspoons of the herb mixture in a bowl and season with salt.

Tear off four large sheets (about 16 inches long) of heavy-duty foil. Place one piece of fish in the center of each. (If the ends of the fillets are thin, tuck them under.) Top with a spoonful of the remaining herb mixture and surround with the corn-tomato relish. Fold up the ends of the foil and seal into packets, leaving room inside for heat circulation.

Grill the packets, covered, until the fish is just cooked through, 8 to 10 minutes. Carefully open the packets and slide the fish and vegetables onto plates. Top with more cilantro and serve with lime.

What's Weighing You Down?

My birthday was this past weekend. I celebrated with family and friends all weekend long. I had so much fun. I realized something this weekend. I have just been going through the motions of my life and not living life to the fullest. Life is too short to put it on hold. I have been putting things off for another day. Well no longer, I'm going to make a list of all the things I have been dreaming of doing and commit to doing one thing on the list each month. I chose to live life now and not let life pass me by. And best of all it will help in keeping weight off by living an active fullfilled life.

Healthy Recipes

Turkey Meatloaf:
3 cups chopped yellow onions (2 large onions)
2 tablespoons good olive oil
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
1 teaspoon fresh thyme leaves (1/2 teaspoon dried)
1/3 cup Worcestershire sauce
3/4 cup chicken stock
1 1/2 teaspoons tomato paste
5 pounds ground turkey breast
1 1/2 cups plain dry bread crumbs
3 extra-large eggs, beaten
3/4 cup ketchup
Preheat oven to 325 degrees F.

In a medium saute pan, over medium-low heat, cook the onions, olive oil, salt, pepper, and thyme until translucent, but not browned, approximately 15 minutes. Add the Worcestershire sauce, chicken stock, and tomato paste and mix well. Allow to cool to room temperature.

Combine the ground turkey, bread crumbs, eggs, and onion mixture in a large bowl. Mix well and shape into a rectangular loaf on an ungreased sheet pan. Spread the ketchup evenly on top. Bake for 1 1/2 hours until the internal temperature is 160 degrees F. and the meatloaf is cooked through. (A pan of hot water in the oven under the meatloaf will keep the top from cracking.) Serve hot, at room temperature, or cold in a sandwich.
